Don't forget that these are often on a geared motor. Those 256 and 1024 cpr are probably(maybe, not sure) on a 1:1 ratio motor. For the pololu system you get 12cpr on the motor shaft side. So on a 30:1 motor thats 12x30 = 360 (wheel/output)cpr.
On the 1000:1 geared motor thats 12000 cpr! Talk about resolution. Sure you lose speed, but you gain torque and precision. Engineering is all about compromise. The 30:1 should give you the speed and cpr for just about any hobbyist's needs.
